This has been a long-time favorite of mine, and I can’t believe I haven’t shared it with you yet. It’s a “one pan” dish, which means you put everything in the pan and bake it. A healthy and tasty supper plate is ready in minutes. Because the chicken is sliced into little bite-size pieces and the oven temperature is high, this dish cooks rapidly. The end result is scorched vegetables and tender chicken.

When you’re hungry yet lazy and on the verge of ordering takeout, this is an excellent option. Instead, bake these healthful vegetables and chicken, and I guarantee they’ll be done before your takeout order arrives. They’re also 1000 times healthier and tastier. Serve these vegetables with rice, quinoa, or toast as a side dish.

Begin by chopping the vegetables and placing them on a small baking sheet. Olive oil, salt & pepper, Italian spice, and paprika are used to season. Combine gently and bake for 15 minutes.

Ingredients

2 chopped medium chicken breasts
1 cup sliced bell pepper (any colors you like)
1 zucchini, chopped 1 onion, chopped
broccoli florets, 1 cup
1/2 cup sliced tomatoes or plum/grape
2 tablespoons extra virgin olive oil
1/2 teaspoon black pepper 1/2 teaspoon salt
1 teaspoon seasoning (italian)
Optional: 1/4 teaspoon

Instructions
Preheat the oven to 500 degrees Fahrenheit.
Cut all of the vegetables into big chunks. Cut the chicken into cubes on a separate chopping board. In a medium roasting dish or sheet pan, combine the chicken and vegetables. Combine the olive oil, salt, pepper, italian seasoning, and paprika in a mixing bowl. Toss everything together.
Bake for 15 minutes, or until the vegetables have blackened and the chicken has cooked through. Serve with rice, spaghetti, or a salad for a complete meal.
