With these handmade truffles, you’ll never want a store-bought peanut butter and chocolate treat again. You may top it with coconut, chopped almonds, cocoa powder, or dried fruit, and it’s made with almond butter and melted dark chocolate. Make a batch and keep them in the fridge for a fast, sweet snack that won’t leave you feeling groggy later.
Ingredients:

1 cup almond butter, unsalted and creamy
1/4 cup almonds (unsalted)
1 cup oats, rolled
1/4 teaspoon kosher salt 1 tablespoon honey
1 tsp virgin coconut oil
4 oz. dark chocolate (cacao content: 70-85%)

Directions:

In a food processor, combine almond butter, almonds, oats, and honey. Roll into 1/2-inch balls once thoroughly blended. Allow the truffles to cool for 15 minutes in the fridge after lining a baking sheet or glass dish that can fit in your freezer with parchment paper. Melt the dark chocolate and coconut oil together in a double broiler or in a microwave for 20 seconds at a time on high until smooth. Cover the truffles with melted chocolate and decorate as desired. To firm the chocolate, place it in the freezer for 30 minutes. Remove from the freezer and place in the refrigerator.
