I was in the kitchen looking for something to prepare for breakfast one summer morning a few years ago (on grocery day). Unfortunately, all of my favorite breakfast foods were unavailable. But it turned out to be a good thing (in this case) since what I came up with was a Berry Coconut Breakfast Bowl, which I now consume on a daily basis during the summer.

That day, I did manage to discover a banana and some fresh berries from last week’s grocery run in my kitchen. So that was my task: come up with a breakfast recipe using those ingredients…in other words, play a real-life version of Chopped.

Simulating real-life situations Chopped isn’t something that happens to me every day, is it? Please let me know if this occurs to you as well!

The wheels started turning in my head, and I thought to myself, “How about chopping up the banana, tossing in some berries, and then pouring a little coconut milk on top?” Then some chia seeds, hemp hearts, and almonds to get some protein in there? It wasn’t difficult at all, and I knew I’d enjoy it. I had no idea at the time that this simple breakfast dish would become a midsummer favorite. My berry coconut breakfast bowl became a new breakfast staple for me.

You are not obligated to utilize the items I used in my recipe below when constructing your breakfast bowl. You may use any berries you have on hand (strawberries, blackberries, and cherries, even if they aren’t exactly berries!). Use whichever nuts you have on hand (sliced almonds, walnuts, and pecans are all great). When it comes to coconut milk, you may use either light or full fat (full fat makes it a bit more indulgent!)

Hemp hearts can be substituted for chia seeds, or both can be used. When I didn’t have any bananas, I substituted peaches or nectarines for people who don’t like bananas.

Whatever items you choose, your berry coconut breakfast bowl will be delicious.

This Berry Coconut Breakfast Bowl is quick, tasty, and completely customizable. It’s got fresh berries, seasonal fruit, and coconut milk in it!

1 cup cleaned berries (blueberries, raspberries, strawberries…whatever berries you have on hand)

1 sliced banana
1/4 cup coconut milk

3 tablespoon chopped walnuts

2 teaspoon chia seeds

2 teaspoon hemp hearts (optional)
Instructions:
In a mixing dish, combine the berries, sliced bananas, and chopped walnuts.
Chia seeds and hemp seeds (if used) can be sprinkled on top.
Pour the coconut milk into the pot.
Mix it up and have fun!
