Protein Cookie Dough Bars with Chocolate Chips

Protein Cookie Dough Bars with Chocolate Chips

Ingredients:

Coconut Flour, 6 Tablespoons

Protein Powder, 6 tblsp.

a quarter teaspoon of salt

1 tblsp. coconut oil (melted)

9 Tablespoon Cashew or Vanilla Almond Milk, unsweetened (room temp)

1 1/2 tsp Vanilla Extract

4 teaspoons of sugar (or natural sweetener)

Mini Chocolate Chips, 2 tblsp.

Directions:

Using parchment paper, line a 9-inch loaf pan (to simplify clean up)

In a small mixing bowl, combine the coconut flour, protein powder, and salt.

In a separate dish, combine the coconut oil, milk, and vanilla extract.

Stir in the sugar until it is completely dissolved in the coconut oil mixture.

Stir in the flour mixture until you have a crumbly dough.

Pour the dough into the loaf pan and push it down with a spatula across the bottom of the pan.

12 tbsp micro chocolate chips, gently pressed onto the top of the protein chocolate chip cookie dough bars

Allow these bars to chill for at least two hours.

Cut into bars.

Keep them in the fridge until you’re ready to consume them.
