4 cooked Portuguese sausage links
2 sheets of puff pastry per box, thawed flour (for rolling)
2 tablespoons of Chablis white wine and Maille black truffle mustard
1 Tbsp. Honey
Mayo, 1 tablespoon
A pinch of salt and 8 chive stalks, diced

Making the sausage bites requires:

Set the oven to 400 °F.

Flour a flat surface or your counter lightly.

To remove the seams from where the puff pastry sheets were folded, place each sheet on the floured board and carefully spread it out with a rolling pin.

To create two distinct pieces, cut each puff pastry sheet in half across the seams.

Each puff pastry sheet should have the chopped chives sprinkled over it.

Each sausage link should be rolled up in a piece of puff pastry. Using a little water and your finger to assist seal the edge, seal the puff pastry edges around the sausage.

Slice the sausage roll into 1 inch pieces and place the roll seam side down on a flat table.

Place the pieces on a baking sheet covered with parchment paper.

The pieces should be puffy and somewhat brown after 20 to 25 minutes of baking.

Before serving, take the dish out of the oven and let it cool for a while.

Making the dipping sauce with black truffle mustard

In a bowl, mix the black truffle mustard, honey, mayonnaise, and a dash of salt.

Use a fork to incorporate and stir until the mixture is creamy.

Keep chilled until you’re ready to use.

You can opt to serve the sausage puff pastry appetizers on a tray with a bowl of sauce so that visitors can dip them, or you can drizzle the sauce over the top of each one.
