1-2 cut heads of broccoli
chopped half a cup of red onion
2 1/2 Tablespoons apple cider vinegar, 1 1/2 cups diced cooked bacon.
1 cup of homemade mayo (recipe below)
Honey, 1/4 cup

Mayonnaise made at home
1 big, room-temperature egg yolk
Fresh lemon juice, 2 tablespoons, at room temperature
One teaspoon of honey mustard
50 ml of sea salt
Olive oil, 3/4 cup

Directions:
1. Combine the broccoli, red onion, cooked bacon, apple cider vinegar, and honey in a separate large bowl. Combining well after mixing.
2. In a little container, mix the egg yolk at room temperature with the honey mustard, lemon juice, and salt. (When using an immersion blender, I choose a jar over a bowl.)

3. Combine for 10 to 15 seconds.
4. Continue blending and start pouring in the olive oil in a slow, steady stream while keeping the immersion blender pressed all the way to the bottom of the container.
5. As it starts to transform into a creamy combination, you’ll start to witness the magic unfold within 2-4 minutes.
6. Add 1 cup of mayonnaise to the dish of broccoli salad.

7. Cold servings that are produced the night before taste best.
