If this is your FAVORITE salad, raise your hand.What else may enhance this salad? Nothing, is the answer. Nothing could improve it. I mean, hard-boiled eggs, blue cheese, tomatoes, avocados, and chicken are the perfect combination.

You might be asking why I’m calling this a healthy Cobb salad at this point. Because it contains bacon, blue cheese, eggs, and avocado, some people could argue that a Cobb salad isn’t healthy. Many of the components are rich in calories. However, I believe that these high-calorie foods are actually healthy for you since they include calories from whole, unprocessed foods. This Cobb salad is loaded with good fats.

However, the quality of the components in your Cobb salad will have a significant impact on how healthful it may be. For instance, I utilize bacon from pasture-raised pigs and hens, as well as chicken and eggs from pasture-raised birds. I use Bibb or green leaf lettuce for iceberg, and I only use organic tomatoes and avocados.

The one thing I don’t like about Cobb salad is that it takes some effort to put together. It might take some time to prepare the chicken, bacon, and hardboiled eggs. Therefore, I only prepare Cobb salad when I have leftover chicken and bacon. Additionally, I specifically include it in my weekly food plan. Monday, I hard boil a lot of eggs.  Tuesday, I prepare a big roast chicken for supper. On Wednesday, I fry bacon for breakfast. On Thursday, I prepare a Cobb salad.

This slightly time-consuming salad becomes a simple meal when prepared in advance. So, rather than ordering it every time you go out, you can now create it at home. Alternatively, you may prepare it at home and still order it whenever you dine out.

SALAD COBB

INGREDIENTS
2 cut and cleaned heads of lettuce
1 avocado, diced

1 cup grape tomatoes, halved

1/4 cup blue cheese crumbles, pepper, to taste Blue cheese or ranch dressing

1 cup shredded or chopped cooked chicken

1/2 pound bacon, fried till crisp and chopped

3 hardboiled eggs

INSTRUCTIONS
In a large bowl, mix together the lettuce, chicken, bacon, hardboiled eggs, avocado, tomatoes, blue cheese crumbles, and pepper.
Lightly toss until mixed.
Serve food on salad plates.
Add blue cheese or ranch dressing on top.
NOTES I like to use Bibb lettuce or green leaf lettuce.
I use the chicken that is left over after roasting a full chicken, although grilled chicken also tastes fantastic.
