INGREDIENTS

▢2 cup + diced yams or sweet potatoes, , dice to small cube shape
▢1 large shallot, , chopped
▢1 ¼ cups butter chicken sauce
▢3 to 4 large eggs
▢Bacon
▢Salt and pepper to taste
▢ Cilantro, garnish

INSTRUCTIONS

Cubed yams are sauteed over medium-high heat in a pan with 1.5 tbsp of your preferred cooking oil. Sauté until they soften and get browned. To taste, add salt and pepper to the food. Add the shallots and continue sautéing them until they become transparent.

In the meanwhile, cook the bacon until crispy and then set it aside to cool.
