Pancakes With Coconut & Vanilla

I frequently turn this pancake recipe into tiny pikelets and bring them on picnics or to work as a snack. It’s so quick and easy to make,for a sweet option, combine quality food-grade orange essential oil with a little cacao to make a delectable choc orange pancake; alternatively, blend in a small amount of banana; alternative additions include chia seeds, shredded coconut, stewed apple, and a few blueberries.

You can make savory pancakes by leaving out the cinnamon, vanilla, and sweetener and replacing them with fresh herbs, high-quality cheese, spices, and/or turmeric. You can also serve the pancakes with avocado, sautéed onions and garlic, mushrooms, tomatoes, or even a dollop of homemade pesto, mayonnaise, or hollandaise sauce on a bed of spinach leaves. Yum!

2-3 individuals served

Ingredients

3 teaspoons sifted coconut flour
four organic eggs.
2 teaspoons grass-fed more ghee for cooking
1/3 cup organic cream or milk from coconut
1–2 teaspoons Vanilla Powder
Apple cider vinegar, 2 teaspoons
Baking powder, 1/2 tsp.
Himalayan salt, just a sprinkle
1 teaspoon of cinnamon

Optional: 1/2 to 1 Tbsp honey or other preferred sweetener.

Method

Eggs, coconut oil, honey (or other preferred sweetener), vanilla, cinnamon, and coconut milk are all combined in a bowl. Alternately, you may just put these ingredients in a food processor or blender and blitz them until smooth.

Avoid overworking the pancake mix since it will make the pancakes a bit “flat” by adding the other ingredients and whisking or whirling them in a food processor or blender.

A big frying pan should be heated to medium. Allow some butter or coconut oil to melt in the pan. The mixture should be scooped out and poured into the pan, then left to fry until browned on all sides using a measuring cup. These cook more quickly and are simpler to handle and flip the smaller they are made.

Until the entire amount of batter has been utilized, continue to cook the pancakes in tiny batches.

When done, immediately serve the pancakes.

Fresh berries, coconut cream or yoghurt were used as garnishes. It is optional to serve the dish with a drizzle of raw honey or pure maple syrup on top.
