OVERNIGHT OATS WITH STRAWBERRY SHORTCAKE

These Strawberry Shortcake Overnight Oats taste just like strawberry ice cream and are sure to be a favorite with the kids! They’re easy to make and incredibly healthful!

If you’re a frequent reader of my blog, you already know that I’m arguably the greatest fan of overnight oats on the planet!

I’m always coming up with different flavors for this easy and tasty meal, but I can’t publish them all since I don’t want to bore everyone with oats!

So far, I’ve posted a recipe for Cocoa Banana Overnight Oats as well as an Orange, Coconut, and Vanilla Overnight Oats recipe.

I wanted to make a more summery oats dish now that the sun has finally come out, thus the Strawberry Shortcake version was born!

First and foremost, a confession: this recipe does not include any shortcake. However, you won’t notice because these oats taste just like strawberry shortcake ice cream. It’s fantastic!

Unlike ice cream, however, this is a delicious, well-balanced breakfast that will serve the entire family. It has enough fat and protein to fill everyone up (for the most protein and fat, choose full fat greek yogurt), and the slow-release carbohydrates will keep you full until noon.

This dish may be made with fresh or frozen strawberries, depending on when they are in season where you live. Frozen strawberries are typically less expensive, and when dipped in hot water to thaw them, they become rather mushy, making them easier to absorb into the oats.

Overnight oats with strawberries

DESCRIPTION
These Strawberry Shortcake Overnight Oats taste just like strawberry ice cream and are sure to be a favorite with the kids! They’re easy to make and incredibly healthful!

INGREDIENTS
a dozen strawberries (fresh or frozen)
2 cups oats, rolled
1.5 quarts of milk
0.5 cup plain or greek yogurt
1 tbsp strawberry preserves
a quarter teaspoon of vanilla extract
chopped fresh strawberries and dessicated coconut are optional garnishes.

INSTRUCTIONS
Using a knife, cut the strawberries into tiny pieces. If you’re using frozen strawberries, rapidly thaw them in a dish of boiling water for 2 minutes.
In a mixing dish, combine the diced strawberries with the remaining ingredients. Stir thoroughly, then place the bowl in the fridge for at least one hour.
Remove them from the fridge when you’re ready to eat them and top with your favorite toppings. The oats may be eaten cold or cooked for 30-60 seconds in the microwave.
NOTES: The oats will stay in the fridge for 2-3 days if kept covered.
