That beautiful smell that wafts over the divider and makes your simple sandwich or salad look pretty boring. Well, I was on the other side of that today…Was my lunch that was causing the envy. It was this slice that did it. It looks and smells beautiful, and better yet, you can make a batch on a Sunday afternoon and have yummy lunch all week as it keeps really well. I prefer it warmed but you can also enjoy it cold.

This recipe is a good one. Tried and tested many times, you really can’t go wrong. A friend of mine who makes this often likes to cook the mixture in a muffin pan, making zucchini slice muffins, which are great for throwing into a lunchbox. You can also customize it with extra vegies (swap half the zucchini for grated carrot or throw in some corn kernels). Whatever you like!

To start, throw the onion and bacon into a pan and saute until the onion softens.

Mix the flour, zucchini, beaten eggs, cheese, oil and salt and pepper with the bacon and onion. Spread mixture into a greased baking dish and bake until golden browned and firm to the touch.

Zucchini Slice

Ingredients
315g Zucchini (grated)
1 Large Onion (diced finely)
3 Rashers Bacon (diced)
1 cup Grated Cheddar Cheese
1 cup Self Raising Flour
1/2 cup Olive Oil
5 Eggs (beaten)
Salt and Pepper
Directions
Preheat oven to 180 degrees C.
Sauté onion and bacon until onion is softened.
Combine flour, eggs, oil, zucchini, cheese and salt and pepper with the sautéed bacon and onion and mix well. Spread into a greased baking dish. Bake for 40 minutes or until golden brown and firm to the touch.
