Pumpkin, spinach & feta pies

Tasty little hand pies that make a great dinner or a lovely lunchbox treat
750 g pumpkin peeled and chopped

250 g frozen chopped spinach thawed

2 green spring onions thinly sliced

200 g feta crumbled

2 eggs

4 sheets frozen puff pastry thawed

1 packet rocket to serve

1 punnet cherry tomatoes to serve

Boil or microwave pumpkin until tender. Mash. Squeeze out moisture from spinach. Add to pumpkin with onions, feta and one egg.
Cut pastry sheets in half. Divide mixture on one end of each pastry piece. Fold over and seal. Place on an oven tray. Lightly beat remaining egg. Brush over pastry. Cook in a moderate oven (180C) for 15 to 20 minutes, or until golden and puffed.
Serve with rocket and cherry tomatoes.
