TACOS WITH CHICKEN AND CILANTRO LIME KALE SLAW

These tacos are fantastic. Fresh kale from Nature’s Greens was used, as well as seasoned chicken with all of the seasonings.

When I got home, I started preparing these tacos right away. It’s one of those dishes where you don’t always need a recipe and just prepare according to your instincts.  It was the best batch of tacos I’d prepared in a long time.

The next step is to cook the chicken while the kale is chilling. When seasoning the chicken, I chose not to use any oil.  I only used enough olive oil to coat the bottom of the pan in a thin layer. It’s critical to arrange the chicken in a single layer to ensure that it cooks evenly.

After about 4-5 minutes of cooking, the cooked side of the chicken should begin to become golden brown. Cook for a few minutes more on the other side or until chicken is cooked through.
Cilantro Lime Kale Slaw with Chicken Tacos

Ingredients

Slaw with Cilantro, Lime, and Kale

1 cup Kale Greens (Nature’s Green)

2 limes, freshly squeezed juice

1.5 tablespoons extra virgin olive oil

14 teaspoon fine salt

14 cup cilantro leaves, fresh

12 cup purple cabbage, shredded

12 cup carrots, shredded

4 onions (green)

Chicken
1.5 pound chicken breast, boneless and skinless
a quarter teaspoon of chili powder
cumin (two teaspoons)
paprika, 1 teaspoon
1/2 tblsp oregano
a quarter teaspoon of garlic powder
a pinch of salt and pepper
Crema d’Avocados
a single avocado
1/2 cup plain Greek yogurt
2 tbsp lime juice, freshly squeezed
12 tsp salt

2 garlic cloves

Instructions
Wash and chop Nature’s Greens to make Cilantro Lime Kale Slaw. Remove any stems from the kale and cut into little bite-sized pieces. Lime juice, olive oil, fine sea salt, cilantro leaves, shredded purple cabbage, shredded carrots, and green onion are combined with lime juice, olive oil, fine sea salt, and cilantro leaves. Mix until everything is well blended. Set aside for 15 to 20 minutes in the refrigerator.

Chicken Cooking Techniques
Combine chili powder, cumin, paprika, oregano, garlic powder, salt, and pepper in a small bowl. Set aside the chicken after seasoning it.

Over medium heat, heat a large skillet. Pour olive oil into the pan to gently coat the bottom. Cook the chicken in a single layer in the pan until golden brown on both sides, about 4-5 minutes each side. Remove the chicken once it’s cooked through and cut it into strips with a knife.

Avocado Crema: A Simple Recipe
In a blender, combine the avocado, Greek yogurt, lime juice, salt, and garlic. Blend until completely smooth.

Fill a tortilla with cilantro lime kale salad, chicken, and avocado crema. Add more avocado or cilantro on top if desired (optional)
