For this dish, you’ll need the following ingredients:

Nori Sheets — These dark seaweed sheets may be found in the Asian or foreign section of most supermarkets.
Cauliflower sushi rice may be made at home or purchased in the frozen department of your grocery store.
Avocado – Healthy fats, taste, and texture are all added by slicing avocados.
Fresh greens, such as field greens or watercress, will add color, nutrition, and crunch to your sushi.
Red cabbage – The same can be said about red cabbage; it adds color and crispness to the dish.
Peppers, both red and yellow — Fresh bell peppers, thinly sliced, make excellent toppings for vegan sushi.
Green onions – A small amount of green onion lends a unique taste to these cauliflower rice sushi rolls without dominating them.

How to Make Sushi with Cauliflower Rice

Roll the nori tightly to the end with a bamboo roller.
Allow the roll to sit, seam side down, for a minute or two.
Combine the ingredients for the dipping sauce.
Each roll should be cut into 5 to 6 pieces.
Serve the sauce beside the sushi pieces.
Here’s a step-by-step tutorial to get you started:

Sushi rolls are simple to make at home. The first step is to prepare your vegan sushi fillings by lining them up and chopping them. The next actions will be significantly easier as a result of this.

A sushi mat is also recommended. These are usually constructed of bamboo, and they can be found in the Asian department of most supermarkets.

Making vegan sushi rolls at home
Place a nori sheet on the sushi mat. Top the cauliflower rice with red pepper slices, green onion slices, avocado slices, red cabbage slices, and field greens on the bottom half of the nori.

Consistency is the objective here. You’ll be slicing this sushi roll into bite-size pieces, and you want the contents in each piece to be quite identical. Remember this when you layer the vegetables on top of the cauliflower rice.

Sitting on a bamboo mat, hands continue to roll nori topped with cut vegetables.
Roll the nori sheet all the way to the finish, using your fingers and the sushi mat to keep the roll tight.

Using the bamboo mat, finish rolling the sushi.

Allowing the sushi roll to rest for a few moments before slicing is a tip I learnt. As a result, the rice moisture softens the nori, allowing the roll to seal.

Cut the roll into 6 bite-sized pieces. Place them on a dish with the dipping sauce and serve (see the recipe below).

Sushi that is vegan and keto.
Vegan keto sushi may seem impossible, but it’s possible with this dish. To begin, if you’re unfamiliar with Keto, the idea is to keep your overall carbohydrate intake between 20 and 50 grams per day. I’ve seen different keto needs, so I believe it’s a very personal issue, and there are tests to assist determine if you’re in ketosis or not.

Keto is a low-carb diet in any case. Sushi cauliflower rice is a great addition to a vegan keto or low-carb vegan diet.
