Instructions On a sushi mat, place one nori sheet (see below). Half of it should be covered in a thin coating of cauliflower rice. Thinly sliced red bell pepper, avocado slices, red cabbage slivers, green onion slivers, and some field greens go on top. Roll the nori using the bamboo roller, pressing pressure on the nori sheet with your fingers as it rolls up. To the very end, roll it securely. Allow the roll to sit, seam side down, for a minute or two.
Combine the peanut butter, agave, Bragg (or soy sauce), and sriracha to make the dipping sauce. To blend, stir everything together. To make a suitable dipping consistency, add 1 to 3 tablespoons of water. Chopped peanuts should be sprinkled on top. Cut the roll into 5 to 6 bite-sized pieces. Serve the sauce beside the sushi pieces.
