I prefer to make my own cajun seasoning blend (which I’ve provided in the recipe notes), but if you want, you may use a store-bought combination. Making your own allows you to have entire control over the flavor, which I strongly advise. Cajun spice isn’t all made equal!

INGREDIENTS Frying Vegetable Oil
1 cup bread crumbs (panko)
2 tblsp. of cajun seasoning
2 pound trimmed chicken tenders
1 gallon buttermilk

INSTRUCTIONS
Using approximately 1/2 inch of oil, coat the bottom of a big heavy skillet. Preheat the oil to 350°F (see cooking lesson below).
Combine panko bread crumbs, onion powder, garlic powder, oregano, basil, thyme, peppers, paprika, and salt in a small dredging bowl. Dredging may be done in small cake pans.In a small basin, pour the buttermilk.
Dip the chicken in buttermilk and then coat it in bread crumbs, one at a time. Carefully place into the heated oil. Cook the chicken in stages so that the pan doesn’t overcrowd.
Cook for 2 to 3 minutes before flipping and cooking for another 2 to 3 minutes. The chicken should be golden brown on the outside and cooked all the way through.
Drain on a paper towel-lined dish after removing from skillet.

SEASONING WITH HOMEMADE CAJUN:
1/2 teaspoon powdered onion
a quarter teaspoon of garlic powder
1/2 teaspoon oregano, dry
1/2 teaspoon basil leaves, dried
a quarter teaspoon of dried thyme
1 teaspoon cayenne pepper
white pepper, 1/4 teaspoon
a quarter teaspoon of cayenne pepper
paprika (1 1/2 teaspoons)
a half teaspoon of salt
