SPICED GINGER PUREE AND ROASTED SWEET POTATO

SPICED GINGER PUREE AND ROASTED SWEET POTATO

INGREDIENTS
1 pkg.
PERDUE® Whole Seasoned Roaster That Is Oven Ready (6 lbs.)

three large sweet potatoes

Unsalted butter, 1 1/2 tablespoons

2 1/2 tbsp. finely sliced, split crystallized ginger

either 1/3 cup heavy cream OR half and half

mild goat cheese, two ounces, at room temperature

14 cup finely minced fresh chives

To taste, add black pepper and salt.

STEP 1

Oven: Preheat to 400 °F.

STEP 2

Sweet potatoes should be scrubbed and stabbed with a paring knife numerous times. Sweet potatoes should be baked for about an hour, or until very soft, in a baking dish coated with foil. Cool and set aside.

STEP 3

Sweet potatoes should be peeled and put into a food processor bowl with a metal blade attached. Process until smooth after adding the butter and 1 1/2 teaspoons of crystallized ginger. Add goat cheese and heavy cream. Blend until well-combined. Scrape the bowl, quickly process, taste, and add salt and pepper as desired.

STEP 4

Add the remaining tablespoon of crystallized ginger and the chives to the potato puree before placing it in a serving dish. With chicken burgers or a roast chicken, serve 1/2 cup of puree.
