Delicious Corn Pudding

It’s sheer paradise to serve a scoop of this over summertime bbq; it’s a pleasant change from the usual potato and pasta salad.


3 bacon pieces, 8 ears of corn

1 medium onion, chopped

50 ml of whole milk

Pepper and salt

Red pepper flakes, 1/4 to 1/2 teaspoon

a half cup of freshly torn basil leaves


Step 1

Grate some corn into a basin. Cook bacon until crisp in a large, heavy saucepan over medium-high heat. Transfer to paper towels to drain with tongs. Cook the onion in the saucepan for 8 minutes, or until tender.

Step 2 Cook the corn for 5 minutes while adding the collected liquids. Add milk gradually while stirring, and simmer for 2 minutes, or until thick and creamy. Add salt, pepper, and red pepper flakes for seasoning. Sprinkle basil on top of the crumbled bacon and corn mixture.
