There are days when even enough is not quite enough, and then there are moments when enough is indeed plenty. On this particular day, we both benefited from my letting him win.

Lunch Recipe
1 rustic multigrain piece of bread
4 to 5 hothouse cucumber slices
a half of one little Avocados Haas
Mayonnaise, 1 tablespoon
8 shrimp in cilantro and lime
1 red bell pepper slice
Green onion, one
The bread piece has been gently toasted. Cut the avocado and cucumber into the shown shapes. Make little chunks out of the green onion.

Slices of cucumber should first be placed on the bread before the avocado. On top of the avocado, spread the mayonnaise. The shrimp will attach to the sandwich more readily as a result. Add the shrimp and then the bell pepper slice on top. Put the chopped green onion into the pepper.
