Healthy Rice Pudding with Horchata

The only source of sweetness in this flavor-packed Healthy Horchata Rice Pudding is dried fruit. Additionally, it is devoid of gluten and dairy.
To cut a long tale short, I’ve never been interested in rice pudding and have never tasted it. That is, until until I prepared this dish. I kept eating this nonstop.

I saw Sarah (the owner) a couple times after learning about Dulcis Milk in the latter part of last year. She not only makes excellent almond milks, but she also genuinely cares about the Austin community and the goods she is selling. She provided me with some samples to taste and several recipe suggestions, including one for rice pudding, that I could test out.

Since I had no idea how to prepare rice pudding, I searched online to find instructions. It turns out that most rice puddings include a lot of sugar.

 You may use any flavored almond milk if you don’t live in Austin and don’t have access to Dulcis Milk. I would advise vanilla that is unsweetened. I strongly advise you to try rice pudding if you have reservations about it. You won’t be let down!

Healthy Rice Pudding with Horchata

Ingredients

Jasmine rice, 1 cup
1 1/2 cups plus 2 cups Horchata, split, with salt to taste.
1 big, beaten egg
50 g of raisins
Dried figs, chopped, half a cup (about 7)
half a teaspoon of cinnamon
A half-teaspoon of vanilla
Horchata milk, coconut yogurt, and cinnamon are optional garnishes.

Instructions
Add rice, 2 cups milk, and salt to a rice cooker. When the rice cooker beeps to indicate that the rice is done, turn it on. In accordance with the directions on the packaging, you may also do this on the cooktop.
Once finished, put the cooked rice and leftover milk (1 1/2 cups) in a clean pot. Cook until thick and creamy for a further 10 minutes over medium heat. Cook for 2 more minutes while stirring regularly and adding the egg, raisins, dried figs, cinnamon, and vanilla.
Turn off the heat and allow to cool. Add optional toppings on top.
