Try this delicious pâté, commonly referred to as “chopped liver,” which uses chicken livers as a less expensive alternative to foie gras. Plan ahead for fridge overnight to allow flavors to meld.

Ingredients: 1 big clove smashed garlic and 1 large sweet onion, coarsely diced
3 tablespoons of melted margarine or 5 tablespoons of rendered chicken fat
one teaspoon of kosher salt or sea salt
4 big hard-boiled eggs, one of which will be used as a garnish.
20 pinches of black pepper boiled into 1 pound of kosher chicken livers
1 generous pinch of nutmeg, ground

How to Chop an Onion Properly
Onion and garlic should be gently sautéed in the fat over low heat until softly browned but not burnt. As soon as they start to wilt, salt the onions and garlic.
