Is there any child in the world that doesn’t love creamsicles? Or orange soda? I was wayyyy into that stuff as a kid. And I still love the flavor of it, although the sugar gives me a headache. I haven’t had anything creamsicle flavored in so long that I nearly forgot it was a thing. BUT THEN I was watching some baking competition with children, and one of the kiddos made a creamsicle flavored macaroon. And I was like (!!!!!!!!!!) I gotta make something creamsicle flavored PRONTO! And then it came to me… orange creamsicle chia seed pudding. It really does taste like the real thing, except its 100 times healthier, and so so easy to make.

Orange Creamsicle Chia Seed Pudding
This Orange Creamsicle Chia Seed Pudding is a healthy breakfast that tastes exactly like your childhood! Plus, you can make it the night before, so it’s ready when you wake up!

Ingredients
1 cup non dairy milk
1 cup orange juice
1/2 cup chia seeds
2-3 tablespoons maple syrup (sub honey or agave)
1/2 teaspoon vanilla
1/4 teaspoon orange zest
Top with:
Orange slices
Instructions
Put all ingredients into a jar or bowl, and shake or stir until the ingredients are well combined.
Once combined, cover and refrigerate for 1 hour.
Take out the pudding and shake or stir again, then return the mixture to the refrigerator for 3-5 more hours (or overnight.)
When ready to eat, top the pudding with orange slices and EAT UP.
