I think I say that I want to eat healthier every year, and it lasts me all the way to the beginning of February. Although a lot of the times, I don’t make it past January.

But, this year I have been very inspired by my mother-in-law and my sister. While I have been in Vancouver visiting them, they have made SUCH good salads that I know I will be trying as soon as I get back to Chicago.

Because right now, the only salad I ever make is my Kale and Quinoa Salad. Even though that one is AMAZING, I think I need to diversify.

But until then, I might be making this Creamsicle Chia Pudding as a healthy breakfast.

WHAT DO YOU NEED TO MAKE THIS CREAMSICLE CHIA PUDDING?
It’s so easy to make. All you need is:

milk
chia seeds
stevia
vanilla extract
orange
That’s it!!

I used blood oranges for the orange in this recipe, but you can use whatever you have on hand.

This recipe is also good if you are doing a sugar free diet this year. Me and John do a sugar free week every couple of months, so you can bet that I will be making this a lot in the New Year.

Ingredients
1 cup milk of choice
1/3 cup chia seeds
1 packet stevia
1/4 tsp vanilla extract
zest of 1 orange
Instructions
In a medium bowl, mix together all the ingredients, and refrigerate. Over the course of the next half hour, whisk the pudding every 10 minutes as it begins to thicken. This prevents the chia seeds from clumping. After the half hour is up, keep refrigerated for 3 hours or overnight.

In the morning, top with desired toppings.

Recipe Notes
If you wanted to bring this breakfast to work, mix everything in a mason jar and just grab and go in the morning.
