How to make Orange Creamsicle Chia Pudding
This is a simple recipe to make that only uses 6 simple ingredients! Here’s what you’ll need:

chia seeds
4 mandarins or your favourite type of orange
coconut milk
vanilla extract
maple syrup
flaked coconut
Here’s what to do:

Peel the mandarins and blend them in a high-speed blender with the coconut milk, vanilla extract and maple syrup.
Add the mixture to a bowl with the chia seeds and mix together.
Place in the fridge to set for at least an hour.
Scoop into cups or jars and top with flaked coconut.

Recipe tips and variations
Different oranges will give this chia pudding a different flavour. I like the taste of mandarins, but you can use any type of orange you love.
If using a large orange instead of mandarins, use just 1 orange.
You can make this recipe with your favourite orange juice if you don’t have fresh oranges on hand. (Though fresh oranges are better!)
Prepare this recipe the night before you want to enjoy it, and let it sit in the fridge overnight. This will give it the best texture!
You can make any type of “creamsicle” chia pudding by replacing the orange with your favourite fruit, such as strawberries or mango.

Ingredients

4 mandarins, peeled
1/2 cup coconut milk (from a can, full-fat or light both work)
1 tsp vanilla extract
2 tbsp maple syrup
4 tbsp chia seeds
flaked coconut to top
Instructions
Blend the mandarins, coconut milk, vanilla extract and maple syrup together in a high-speed blender until smooth and creamy.
Add to a mixing bowl with the chia seeds and mix together. Let sit for 5 minutes then give it another mix until well combined.
Cover the bowl and place in the fridge for at least 1 hour, or overnight.

Scoop the chia pudding into bowls or small jars and top with shredded coconut.
