It has a flavorful mix and texture that will make it a memorable winter treat.

When it comes down to it, everyone of us has a meal or food group that we simply cannot survive without over the long run. Peppermint and chocolate is undoubtedly one of my favorites.

When I need a quick fudgy fix that is so filling I can eat it for a meal and be satisfied for hours, I now turn to this sugar-free peppermint brownie lava cake, which satisfies my desires for brownies.

Lava Cake with Peppermint Flavor

Ingredients 1 T melted butter or, for dairy-free

1 T melted refined coconut oil
2 tbsp. coarsely ground blanched almond flour)

1 tbsp. ground golden flax
1 T cocoa powder – (I’m practically hooked to Ghiradelli; link)
1 T of Gentle Sweet or 2 T of Swerve
1/2 teaspoon of baking powder
Egg, salt, and 1/8 teaspoon peppermint essence
1 spoonful of chocolate chips sans sugar (If you’d like, hold back a few for the top.)
whipped cream or sugar-free ice cream as a garnish!

Instructions
Mix the dry ingredients together in a large cup or mug.
Add the remaining ingredients and well whisk.
Add a few additional chocolate chips on top.
Cook in the microwave for 45–55 seconds, or until it reaches lava cake-like yet fudgey perfection.
* Return it for a drier cake if you want a cooked cake texture.
Notes *Always choose peppermint above other mint varieties.

You do want this to be slightly underdone. * Oven timings will vary.
