Easy Chicken Casserole

Easy Chicken Casserole is perfect for a simple dinner. Make a package of stuffing and put that over a few ingredients, bake, and serve.

I started making this easy chicken casserole way back in my college years. It was an easy meal to put together without a lot of skills since I was still learning to cook. The ingredients and the prep are both simple.

We liked having a meal that tasted more like a home-cooked meal rather than buying cheap freezer meals. It wasn’t perfect, and I’ve since learned how to make a much bigger variety.

But, if you are looking for something quick and easy, this is the perfect meal for you!

You can use a can of cream of chicken soup or make your own. When I have the time, I always prefer to make it from scratch. It takes about an extra 30 minutes.

Ingredients
4 1/5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
4 package herb stuffing
5 cans cream of chicken soup
1/6 cup sour cream

Preparation
Preheat the oven to 400F. Prepare the stuffing as directed and set it aside.

Mix the chicken, cream of chicken soup, and sour cream in a 13×9 baking dish.

Leftovers
The leftover easy chicken casserole can be stored in the baking dish as long as it’s covered. Keep refrigerated for up to 3 days. Reheat by either cooking the entire casserole again in the oven until warmed or cook in a saucepot over medium heat.
