I’ve mentioned before that when it comes to breakfast, I’m usually pretty boring. While it is my favorite meal of the day, I usually have the same thing on repeat. The laziness is real.

But you can only eat so much oatmeal.

So sometimes, I go all out.

Because if you are going to take the time to make breakfast, you should make it epic. And what’s more epic than dessert for breakfast?

Plus, there’s something totally underrated about waffles. Pancakes get all the attention even though waffles are easier to make! It’s not right.

If you consider waffles to be a Sunday treat only, think again. You only need 10 ingredients for this Chocolate Waffles Recipe, most of which you probably already have in your kitchen, and prep takes less than 5 minutes (plus your waffle makers’ cooking time).

While you wait for delivery, you can also use this recipe as a pancake batter! The only difference is you’ll have to use about 1/2 cup less almond milk. Pretty cool, huh?

The ingredients used to make these chocolate waffles are:

Bananas
Almond milk, unsweetened
Vanilla powder (or vanilla extract)
Dark chocolate

You can also add date sugar (optional), depending on the sweetness of your bananas.

How are these Chocolate Waffles ?
Well, what’s your definition of “healthy?” Kidding.

I’ve made these waffles healthy by swapping out unhealthy, processed baking ingredients for much healthier ones (as you’ve seen from the ingredient list above).

For starters, I use nutritious flours: almond flour and buckwheat flour.

I made them vegan by using almond milk instead of dairy milk, and bananas instead of eggs.

I also made the sweetener optional because the ripeness of the bananas will affect the sweetness of your waffles. If you use ripe bananas with brown spots, the waffles will be sweeter, and the flavor of the bananas will be noticeable. If you decide to use less ripe bananas without spots, the waffles won’t be as sweet and you won’t notice the taste of the bananas.

What toppings can you put on these Chocolate Waffles?
Oh, man. My imagination could run wild here. Coconut whipped cream? Berries? Coconut yogurt? Peanuts? Melted dark chocolate?

Those are just a few options, but you can also stick to the typical waffle toppings: fresh berries and maple syrup.

If you want a more intense chocolate fix, add vegan chocolate chips to your batter!

You can also go full dessert mode with a healthy scoop of vegan ice cream.

Can I freeze these for later?
These waffles are great right off the waffle iron, but you can also make a large batch and freeze the extras to make any day of the week! Sold yet?

Oh and don’t worry—these waffles freeze perfectly. All you have to do is cool them completely before freezing them, then you can either place them all in a large freezer bag or wrap them individually. Either will work.

CHOCOLATE WAFFLES RECIPE

INGREDIENTS
2 bananas
2 1/4 cups almond milk, unsweetened
1 tsp vanilla extract (or vanilla powder)
1/4 cup melted dark chocolate
1/4 cup date sugar, optional (depending on the sweetness of your bananas as mentioned above)
4 tsp baking powder
1 tsp salt
2 cups almond flour
1 1/2 cups buckwheat flour
1/2 cup cacao powder, unsweetened
1/4 cup coconut oil, melted
DIRECTIONS
To a blender, add the bananas, almond milk, and vanilla extract. Blend until smooth.
Pour mixture into a mixing bowl, and fold in the melted dark chocolate.
To a separate mixing bowl, add the sugar (optional), baking powder, salt, almond flour, buckwheat flour, and cacao powder. Mix until combined.
Pour the wet ingredients into the dry ingredients, and mix.
Pour the melted coconut oil into the batter, and mix.
Heat up your waffle iron, and cook waffles until crisp! Serve with whatever toppings you’d like!
