First off, this No Peek Chicken Rice Recipe is quicker than takeout and ideal for weeknights. I prepared this dish in about three minutes. The time it took to combine all the ingredients was longer than the time it took for my oven to heat up.

You do have a lengthy cook time, but it is entirely hands-off. You can prepare a filling and healthy lunch for your family in about 75 minutes.

Ingredients

two cups of long-grained rice

Cream of mushroom soup, one can For a replacement, check the previous post.

1 can of cream of chicken soup; substituted in the previous post

water, one soup can

2 tablespoons of seasoning for Montreal chicken

six medium-sized skinless, boneless chicken breasts (or chicken tenders)

pepper and salt as desired

optional – 1 small can of drained mushrooms

Instructions

Clean and grease a 9×13-inch casserole dish.

Set oven to 350 degrees Fahrenheit.

Pat chicken dry after rinsing. Place in the casserole dish in a single layer, then season with salt and black pepper.
Combine the soups, water, spices, and rice in a large bowl. (as well as mushrooms, if you’re adding them)
Fill the dish with the mixture, then cover it with foil.
Bake at 350 degrees for 1 hour to 1 hour 15 minutes, or until rice is soft and chicken is well cooked.
Serve right away.

Notes
A Montreal Chicken Seasoning combination is what I use. The recipe is below if you’d rather create your own or can’t locate it.
4 teaspoons coarse salt.
4 teaspoons garlic flakes.
3 teaspoons onion flakes.
2 tablespoons cracked pepper
3 teaspoons of parsley.
2 teaspoons red pepper flakes.

1 teaspoon of coriander seeds
1 teaspoon paprika
