Ingredients
11 ounces (300 grams) chicken breast, cut into large pieces
3 bouillon cubes, dissolved in half glass of water
2 tablespoons lemon juice
3 tablespoons olive oil
2 cloves garlic (minced) and 1 medium white onion (chopped) OR 3 tablespoons Brazilian sofrito
12.7 ounces (360 grams) white rice, washed
2 tablespoons tomato paste
1 red bell pepper, small diced
3.5 ounces (100 grams) frozen peas
1 tablespoons parsley, chopped
Salt and ground pepper to taste
5 cups (1200 milliliters) boiling water

Instructions
For the marinade, combine a bouillon cube with lemon juice in a glass of water.
In a closed, inert container, such as a glass jar or resealable plastic bag, place the chicken and marinade. For 30 minutes, place it in the refrigerator.
Wash the rice, cut and dice all of the veggies, and start a tea kettle of water to boil. Leave it alone.
After the chicken has marinated, place the chicken pieces to a big pan that has been heated to medium-high heat. Cook for 6 to 10 minutes, or until golden brown.

Sauté the onion and garlic in the same skillet. Then, while thoroughly stirring, add the rice, tomato paste, bell pepper, and water.
Once the rice has absorbed the water, cover the pan, reduce the heat, and simmer for about 15 minutes.
Stir in the peas.
