It’s very simple to create these vegan carrot cake bliss balls. Perfect for a delicious on-the-go snack.
Ingredients
1 finely grated medium carrot
1/3 cup chopped walnuts
1 cup oats, rolled
1 12 tblsp. peanut butter
a pinch of cinnamon
1 teaspoon extract de vanille
Medjool dates, pitted, 125g
1/3 cup coconut flakes
Instructions
1Blitz the carrots, walnuts, and oats in a food processor until finely chopped. Pulse together the peanut butter, cinnamon, and vanilla.
2With the processor running, gently add the dates until the mixture is well blended and forms a ball.
3Make 16 balls out of the mixture (about one tablespoon of mixture per ball).
4Spread coconut on a big platter and roll bliss balls in it to gently cover them. Chill in an airtight jar in the refrigerator.
Bliss balls can be kept in an airtight jar in the fridge for up to one week.
