This dish is excellent because, although seeming like a treat, it is simply oatmeal with a unique twist. It’s a fantastic meal to prepare in advance and serve to friends or store in the refrigerator so you have breakfast for the entire week. Chocolate chips are always a good choice, especially for breakfast, am I right?

It is based on Trailside Oatmeal Treats, one of my all-time favorite sweets from my youth. Do you possess them? They contain oats, peanut butter, chocolate chips, raisins, and are filling and tasty. Almost like a cookie version of a granola bar. And here it is—baked oatmeal!

Breakfast is ready in just a few simple steps: measure, stir, heat, pour, bake. What if the children want to assist? Better still! This is the perfect recipe for them to help with. It looks incredible, doesn’t it? It’s similar to having a cookie for breakfast, but without the guilt. Really, it doesn’t get any better than that!

Baked oatmeal from Trailside Treat

1 9-by-13-inch dish is served.

Ingredients

Old-fashioned oats, 3 c.

Brown sugar, 112 cups

5½ c. milk

peanut butter, 1/2 cup

3 beaten eggs

Raisins, 1 cup

Chocolate chips, one cup

Instructions

Oats, milk, brown sugar, peanut butter, and eggs should all be combined in a big saucepan.
Mix thoroughly, then cook while stirring often for 20 minutes, or until the mixture thickens.
Add raisins when the mixture has thickened.
Add mixture to a greased 9×13-inch pan, then sprinkle with chocolate chips.
Oatmeal should be baked for 30 minutes at 350 degrees or until it sets.
Wait for five minutes.
Warm serving; if desired, drizzle milk or more brown sugar over top.
