A PITAYA BOWL’S HOW TO
Step 1: Slice bananas, chop dragon fruit and mango into little cubes, and then freeze everything firm. Although I like to freeze them overnight, if you have a deep freeze you may freeze them more quickly.

Step 2: Fill the bowl of a food processor with frozen fruit and a little amount of coconut or almond milk (you can also use coconut water).

Fruit is chopped in step 1 to be frozen, then frozen fruit is added to a food processor in step 2.

Step 3: Process the fruit until it is chopped up. Process the fruit more until it “fluffs” up and reaches soft serve consistency.

Step 4: Pour the dragon fruit smoothie into the bowls, then top with the fresh fruit, coconut, almonds, or nut butter.

The fruit is processed in step 3 until it is creamy, then toppings are added in step 4.

INGREDIENTS
1 frozen banana, chopped.
2 cup diced and frozen mango
1 cup of frozen, chopped dragon fruit
1/4 cup canned, full-fat coconut milk
Toppings (optional)
fresh fruit, nuts, or nut butters, coconut
Granola chips with chocolate

INSTRUCTIONS
The frozen fruit should be put in a food processor. Before processing, allow it slowly thaw for about 5 minutes at room temperature.
When the mixture starts to fluff up and become extremely smooth, add the coconut milk and pulse again.
To remove any fruit pieces that aren’t processing, use a spoon.
My food processor works best when the bowl is approximately halfway full while processing this. Some of the fruit won’t combine nicely if there is too little or too much.
Add fruit, nuts, coconut, or nut butter for a garnish, or just eat as soft serve ice cream!

NOTES You may substitute bananas and mango for the dragon fruit if you can’t locate it or don’t want to pay the expensive cost of the smoothie packs. For a splash of color, add fresh raspberries.
Ensure the fruit is completely frozen. If the fruit isn’t completely frozen, the texture won’t be thick and creamy.
Can a blender be used to produce a pitaya bowl? Yes! To create these, use a high-speed blender, such as a Vitamix. To get it going, add 1/4 cup of liquid (coconut milk, almond milk), and then firmly push the fruit down with a tamper stick. The procedure will take longer, but it will be completed.
