Quiche with ham and cheese that may be made in advance and frozen.

This dish has an outstanding taste combination of savory ham, two kinds of cheese, and a touch of caramelized onions.

Ingredients

1 frozen or chilled pie crust; omit if making a crustless pie.

1 little onion

two teaspoons of butter

1 cup diced ham

one cup of new spinach

7 eggs

3/4 cup of half-and-half

Cheddar cheese, one cup

Parmesan cheese, half a cup

Decorative Options

Parsley, Green Onions, and/or Chopped Bacon

Instructions
Turn on the 375 degree oven.
Check the packaging for your pie crust’s directions; frozen pie dough typically requires waiting before it can be unrolled. If so, remove it from the freezer and set it aside while you get the following few steps ready.
Avoid slicing the onion too thinly since they will diminish in size as they cook.
In a medium pan over medium-low heat, melt the 2 TBS of butter and add the onions.
Cook the potatoes for about 20 minutes, or until they start to brown and caramelize. Cooking requires regular stirring.
To enable the flavors to meld, add the diced ham and simmer for an additional 7 minutes.
Add the spinach and simmer for 2 minutes, or until it starts to wilt.

Get rid of the heat.
The eggs are cracked into a medium basin. Add the half-and-half and whisk for two minutes at a high speed.
Spread the pie dough into a 9-inch pie pan or Springform Pan that has been gently oiled. (I used a springform pan so I could safely remove the entire quiche.)

 Add half of the cheeses on top.

On top, pour the egg mixture. You don’t want the filling to overflow, so make sure there is a little additional room because the eggs will rise as they bake.

Add the remaining cheese on top.

Bake for 35 to 40 minutes, or until the centre is cooked through and the top starts to brown. (My test took 35 minutes; verify it then.)
Before serving, let it cool for five to ten minutes.
Serve after adding bacon, parsley, or green onions as garnish!
Notes If absolutely necessary, milk may be substituted for the half and half. I discover that while half and half makes the mixture creamier, it slightly mutes the taste of the eggs.
