Nachos con Todo literally means ‘nachos with everything’, and although this sometimes means with minced meat, I created a vegetarian Nachos con Todo recipe. This nacho recipe is super easy to make, great party food and easy to share with friends. Ever since my trip to Mexico I love Mexican food even more than I already did. I learned that real Mexican tacos are a lot smaller than the ones I used to make and that the tortillas are always made of corn and not of flower like in Europe. I also learned that you don’t need meat for a good Mexican meal. You can easily replace it with, for example, black beans. I had no problem eating vegetarian during my time in Mexico, so it inspired me to make new vegetarian Mexican dishes at home as well. Made vegetarian burrito’s for example and vegan pulled pork in a Mexican way. I even made a vegetarian nacho recipe before, an oven dish with tortilla crisps, pumpkin and Mexican herbs. This vegetarian nachos con todo recipe is even easier to make!
I’ve used two kinds of tortilla chips for this recipe, natural and barbecue flavored. I ordered them at the Oil & Vinegar webshop. By using these two flavors of tortilla chips your dish won’t only look nice, it adds a richer flavor to the nachos con todo as well. The tortilla chips aren’t the only way that I added color to this dish, as you can see the green avocado and red tomato cubes give these nachos con todo dish a colorful look! Nachos con todo Ingredients (as a starter for 2): 50 grams tortilla chips naturel 50 grams tortilla chips barbecue flavor 75 grams grated cheese 1 tomato 1/2 red onion 1/2 avocado Fresh coriander (cilantro)
Pre-heat the oven to 180°C. Put the tortilla chips in a deep plate. Shuffle them with your hands so that the 2 colors mix. Sprinkle with the grated cheese. Put the nachos in the oven for 10 minutes. In the mean time you can cube the avocado and the red onion and finely chop the coriander. Top the nachos con todo with all the remaining ingredients when it comes out of the oven.
