Ingredients
200g noodles, thin and cooked 200 grams noodles, thin and cooked
120g pork mince 120 grams pork mince
2 tbs sichaun peppercorns 2 tablespoon sichaun peppercorns

3 medium shallots, finely diced 3 medium shallots, finely diced

5 tbs soy sauce 5 tablespoon soy sauce
1 tbs sesame oil 1 tablespoon sesame oil
4 tbs chilli oil 4 tablespoon chilli oil
2 tsp rice wine vinegar 2 teaspoon rice wine vinegar
1 tsp sugar 1 teaspoon sugar
Description
This pork noodle dish is packed full of sweet oriental spices.
Method
Step 1 of 4
Cook the noodles as per pack instructions, drain and leave to one side. In a wok or similar pan, fry the peppercorns for 1 minute and then remove from the heat and crush and set to one side.
Step 2 of 4
Now add the pork mince to the wok with the sesame oil and fry for 5 minutes or until it starts to brown. Add the shallots, ya chai and crushed peppercorns to the pan and fry for a further 2 minutes while tossing.
Step 3 of 4
Add the rest of the ingredients apart from the scallion to the pan along with the cooked noodles and fry while mixing for a further 10 minutes until the sauce starts to reduce.
Step 4 of 4
Remove from the heat and serve with scallions to garnish.
Helps digestion: Soy sauce was given to 15 people, which resulted in increased secretion of gastric juices. Increased secretion of gastric juice is thought to aid digestion.
Stomach health: Some isolated sugars in soy sauce have a positive prebiotic effect on certain types of bacteria found in the gut. This can be beneficial for stomach health.
