ARRABBIATA VEGAN PASTA

We’re turning up the heat with an old Frankie favorite: spaghetti Arrabbiata! It’s got a lot of oomph.

Time to prepare: 2 minutes

Time to cook: 10 minutes

INGREDIENTS

three garlic cloves

a few drops of oil

1 red onion, sliced

1 green chili, chopped

half a roasted red pepper, sliced

halved olives (eight to ten)

150g penne or spaghetti

1 tin tomatoes, chopped

chilli flakes (large pinch)

a pinch of sugar

a squirt of balsamic vinegar

a little amount of grated vegan cheese

a little rocket

METHOD 1: Finely chop the garlic and cook it in a skillet with a little oil over medium heat.

2. Add the sliced red onion, chopped green chili, roasted red pepper, and olives once aromatic. Cook for a total of 5 minutes.

3. While they’re cooking, start boiling your pasta.

4. Next, add a tin of chopped tomatoes and a liberal amount of chilli flakes to the onions (depends on how spicy you like it). To assist enhance and sweeten the harshness of tomatoes, add a pinch of sugar. A dab of balsamic vinegar will enhance the flavor.

5. Combine all ingredients in a medium saucepan and simmer over medium heat while the pasta cooks.

6. Add your spaghetti to the pan and thoroughly mix it in.

7. Divide over two spaghetti bowls, top with a hefty bunch of spicy rocket and grate some vegan cheese. Enjoy!
