450 Gms or 2 medium Boneless Chicken Breast
1 head romaine lettuce rinsed, dried and chopped
½ cup Chopped Cherry Tomatoes
½ Diced Cucumber
1 Mango peeled, pitted and diced
1 Avocado pitted, peeled and diced
½ Small Onion sliced
¼ cup Coriander roughly chopped
½ cup Almonds toasted and sliced
2 tsp olive oil
½ tsp Garlic Powder
Salt and pepper to taste
½ cup Extra-virgin olive oil
3 tbsp Apple Cider Vinegar
2 tsp Mustard Sauce/Dijon Mustard
2 tsp Honey
1 tsp minced garlic
1 tsp Sea Salt
¼ tsp Black pepper powder
3 Step Chicken Salad Recipe
Thoroughly wash the chicken breast and pound to flatten the chicken. Season with garlic powder, salt and pepper and sauté in 2 tsp olive oil on medium heat until it cooks and turns brown on all sides. Remove from the pan and cool for 5 minutes. Cut the breast lengthwise into strips.
In a salad bowl, add lettuce, tomatoes, cucumber, mango, avocado, onion and coriander. You can mix everything or arrange the veggies on the spread lettuce.
Whisk all the dressing ingredients thoroughly in a small mixing bowl until everything is combined. If using a mason jar, cover with its lid and shake well. Check the taste for salt and drizzle over the salad. Garnish with almonds and serve with fries or chips.

Recipe Tips

If you’re not going to use the dressing right away, shake or mix it well right before pouring it over the salad before use.

Frequently Asked Questions

What can I substitute apple cider vinegar with?

You can use 3-4 tbsp lemon juice or 1-2 tbsp white vinegar instead of apple cider vinegar.

Can I use walnuts instead of almonds?

Yes. You can use any nuts of your choice like walnuts, peanuts, pecans or seeds like sunflower, chia, flax or pumpkin to garnish the salad.

Can I store the salad in the refrigerator for a day?

Yes. You can refrigerate the salad for a day, but make sure you don’t add the dressing. Adding the dressing before storage will make the salad soggy. Always add the dressing right before serving.
