Happy Friday, friends! I want to keep the whole raspberry banana trend going this week, because they’re two of my favorite fruits. We started the week with a dreamy smoothie bowl, and we’re ending it with these vegan raspberry banana overnight oats.

This a perfect make ahead option for a super simple, healthy, and satisfying breakfast. I wanted to give you some overnight oats without the addition of protein powder in case you don’t have it or don’t want to use it!

Ingredients for vegan raspberry banana overnight oats
Rolled oats: I always use old-fashioned, whole grain rolled oats because they have the best texture and chew.
Ground flaxseed: ground flax provides a lot of nutrition, including omega-3s. It helps to give the oats a nice thick texture.
Banana: you’ll mash up a super ripe banana and mix it through the oats, which is the main sweetener in the recipe. Because it’s the only sweetener, you want to make sure the banana is super ripe and spotty for optimal flavor and sweetness.
Nondairy milk: you’ll soak the oat mixture in some nondairy milk overnight (or for a few hours). I like unsweetened almond milk for neutral flavor, but any nondairy milk works.
Raspberries: you can use fresh or frozen raspberries – I always go with frozen because they last way longer and are usually less expensive. They add a great tart contrast to the sweet banana.

Tips for making vegan raspberry banana overnight oats
Add a splash of milk before serving to get a texture you like. I typically don’t add more liquid at this stage because I like my oats VERY thick, but feel free to add a bit more milk to get the texture you prefer.
Have fun with the toppings. In addition to the raspberries, feel free to add any other toppings you like on oats! A drizzle of unsweetened vegan yogurt or nut butter would be great, too.

INGREDIENTS

3/4 cup rolled oats
1 tbsp ground flaxseed
1 ripe, mashed banana
3/4 cup nondairy milk – I use unsweetened almond milk
1/2 cup fresh or frozen raspberries
INSTRUCTIONS

The night before eating, add the oats, flaxseed, mashed banana to a bowl and mix.
Pour the milk over the oats (no need to stir!), top with the raspberries, and set in the refrigerator overnight.
The next morning, mix the oats to see if you need to add any more milk. Sometimes a few oats might seem a bit dry, so I usually add a tablespoon or two. Just add enough to get the oats to a texture you like, then add any other toppings you want!
