Vegan Nachos with Barbecue Jackfruit

Jackfruit is very similar to tofu in that it tastes like whatever you flavor it with. I use barbecue sauce in this recipe.

You can use whatever barbeque sauce is your favorite.

The green jackfruit has a slight sweetness to it, which is why I like to rinse it very well. This takes away that taste.

These nachos include my favorite cheese sauce ever. I use the base recipe for many things including cheese dips, macaroni and cheese, and just covering everything I eat in cheese sauce.

It is a very versatile sauce that you can easily make thicker or thinner depending on the recipe you are using it for.

You can add chipotle or hot sauce for a spicy version!

You can eat it with a spoon right out of the blender, because its just vegetables after all!

These nachos are so so good!

They would be perfect for sharing (if you are into that sort of thing). They would be great for parties, and Im pretty sure anyone you made these for would be your bf forever. Just sayin. They are that good.

I like to simmer the jackfruit for 20 minutes, then bake in a hot oven for 15 minutes to create these yummy little crispy edges. This is optional, it is good right out of the pan as well.

1 Cup Nacho Sauce Recipe Follows this one
2 20 Ounce Can Green Jackfruit in Water
1 Cup Barbecue Sauce
1 Cup Water
All the nacho toppings you like including
Black Beans
Red Onion
Rinse jack fruit very well and remove seed pods.
Chop the jackfruit, mostly chopping the harder core.
Add jackfruit, BBQ sauce, and 1 cup water to a cast iron pan, other oven safe pan, or a small pot.
Simmer on low for 25 to 35 minutes until most of the liquid is gone.
Optional step for a drier crispier jackfruit. Heat oven to 425 degrees fahrenheit.
Place pan of jackfruit in oven and bake for 15 minutes. If using a pot that is not oven safe, transfer jackfruit to an oven safe pan and bake for 15 minutes.
Place tortilla chips on a large plate or platter and pour nacho sauce over the top. Sprinkle BBQ Jackfruit, and all other nacho toppings.
Add more nacho sauce!

2 Medium Sized Potatoes
2 Medium Carrots
1/4 Cup Nutritional Yeast
2 Tbs Lemon Juice
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
Water as needed
Peel potatoes and carrots.
Chop carrots and potatoes and place in a pot with water. Boil until fork tender.
Drain water and place veggies in a food processor or vitamix blender.
Add nutritional yeast, spices and lemon juice.
Blend for one minute or until nice and smooth.
If too thick to blend, add a little water at a time until it is the thickness you like.
Pour over nachos, use as a dip for chips, whatever your cheese loving heart desires
