Vanilla Pudding for Summer Fruit Salad:
The salad is then topped with a simple sauce made form instant vanilla pudding powder, and vanilla extract. I was a little dubious about the combination at first, especially when it looked like there was weird lumps all over the fruit, but as the pudding, vanilla, and natural sugars from the fruit worked together over time in the fridge, it made a wonderful and subtle sauce that was the perfect addition to this salad!

INGREDIENTS
The Best Fruit Salad with Pudding
1.5 lb Strawberries
14oz Blueberries
1.5lb Fresh Pineapple
5 cups Red Grapes
4 can Mandarin Oranges, drained
5 tbsp Instant Vanilla Pudding (just the powder)
4 1/5 tsp Vanilla Extract
INSTRUCTIONS
Combine the strawberries, blueberries, pineapple, grapes and oranges together in a large bowl. Then sprinkle the powdered vanilla pudding on top, along with the vanilla extract. Finally, using a rubber spatula, carefully toss all the ingredients together.
Let sit in the fridge for at least two hours, or overnight if possible. Once all the pudding has been absorbed into the fruit salad and you no longer see clumps of dry powder, your salad is ready to serve.
Fresh pineapple is extremely rich in many ingredients that are key to good health.
The fruit has a low caloric value (has only 50 calories per 100 grams), does not contain saturated fat or cholesterol, but is a rich source of soluble and insoluble fiber, such as pectin.
Pineapple contains a proteolytic enzyme called bromelain, which digests food by breaking down proteins. Bromelain also has anti-inflammatory, anti-cancer and anticoagulant properties. Scientific studies have shown that regular consumption of pineapple helps fight arthritis, heartburn and parasitic worms.
Fresh pineapple is an excellent source of the antioxidant vitamin, vitamin C. This vitamin is necessary for the synthesis of collagen in the body. Collagen is the main structural protein in the body, necessary for maintaining the integrity of blood vessels, skin, internal organs and bones. Regular consumption of foods rich in vitamin C helps protect against scurvy, boosts immunity (creates resistance to infectious agents) and helps collect harmful, inflammatory free radicals from the body.
It also contains a solid amount of vitamin A (there are 58 international units in 100 grams) and beta-carotene. These ingredients have antioxidant properties. Vitamin A is also needed to maintain healthy mucous membranes and skin, and is key to good eyesight. Scientific studies suggest that regular consumption of foods rich in flavonoids helps protect against cancer of the lungs and oral cavity.
Potassium is an important component of cell and body fluids and helps regulate heart rate and blood pressure. Copper is a useful cofactor for red blood cell synthesis. Manganese is a cofactor for the enzyme superoxide dismutas, which is a very powerful collector of free radicals.
