TAPIOCA PUDDING WITHOUT MILK

Non-dairy, Vegan
1/3 cup of tiny pearl tapioca should be rinsed through a fine mesh sieve.
In a saucepan, put the pearls with:
7/8 cup of water
Set a 30-minute timer and let the water to soak.
Add:
2 and a half cups cashew milk (How to Make Cashew Milk Video)
10 drops of vanilla stevia liquid
1/8 teaspoon of salt
Bring to a simmer while keeping a close eye on it to prevent boiling over.
Simmer uncovered for 15 minutes on the lowest heat setting while stirring often.
Remove from heat and allow it cool for a short while.
Mix in:
2-tablespoon chia seed meal (equal to 1 tbsp chia seeds)
I ground the chia seeds into meal using my coffee grinder.
cold or warm serving.
This dish is very good; use caution.
