With a ham foundation and a zingy spinach and cheese filling, this dish is quick and tasty.  It may be made vegetarian, lactose-free, and gluten-free.

Six ham slices (exclude for vegetarian option)
Baby spinach, 400g
6 eggs
one-fourth cup self-rising flour (gluten free, if required)
