PATE OF BALSAMIC CHICKEN LIVER

INGREDIENTS

1 pound of organic liver (chicken gives a softer taste but can be done with any liver)
chopped 1 1/2 onions
Balsamic vinegar, half a cup
4 garlic gloves
Dijon mustard, 1 teaspoon
1 fresh rosemary sprig
2 fresh thyme sprigs
1 tablespoon plus as much as 1/4 cup of butter

INSTRUCTIONS
Two or three tablespoons of butter should be used to saute the liver and onions until the liver is browned and the onions are soft.
Cook uncovered until the majority of the liquid has evaporated before adding the balsamic vinegar, mustard, herbs, and lemon juice.
Transfer the mixture to a food processor and add the remaining butter 1 tablespoon at a time, blending until the mixture is a smooth, creamy paste.
To taste, add salt and pepper.
