Mussel Croquettes

Mussels/8 ounce can mussels 3 Pound
Butter 4 Tablespoon
Flour 6 Tablespoon
Milk 3/4 Cup (12 tbs)
Sliced mushrooms 1/2 Cup (8 tbs)
Dry breadcrumbs 1 Cup (16 tbs)
Egg whites 2 , beaten
Oil 2 Cup (32 tbs) (For Deep Frying)
Parsley sprigs 1 Tablespoon

Wash and scrub fresh mussels.

Cook them, covered, in 1 1/2 to 2 cups boiling water for 7 to 10 minutes or until the shells open.

Remove mussels from the shells and reserve 1 cup cooking liquid.

If canned mussels are used, reserve the liquid from the can and add enough water to make 1 cup.

In a saucepan, heat the butter, stir in the flour and cook 2 minutes.

Add the reserved liquid and the milk gradually, beating constantly with a wire whisk until the sauce is smooth and very thick.

Add the mussels and mushrooms and cook 5 minutes.

Place the mixture in a shallow flat dish and refrigerate for 2 hours or until the mixture is quite firm.

Divide into 8 equal parts and form each into a cylinder 3 inches long and 1 inch in diameter.

Roll each cylinder in breadcrumbs, dip in the egg white and roll again in breadcrumbs.

Heat the oil for deep frying and fry the croquettes, a few at a time, for 3 to 5 minutes.

Drain on paper towels.
