I haven’t cooked, I haven’t cleaned and I haven’t eaten much in the last few months. You already know the reasons, they are beautiful and happy, but these days were very difficult for me because they separated me from what is natural for me. There is also the best possible season when it comes to fresh food – a summer in which everything is full of berries, wonderful colorful vegetables, sweet and juicy fruits (imagine, I didn’t like watermelon either). The season that I normally use to the maximum, and what I can’t prepare for colder days – I either freeze or preserve. This year I didn’t do any of that, but I had to rely on my mother and what she gave us – a jar of seasonal fruit jam, a cup of frozen salsa, a bag of vegetables for chewing gum.

The only thing I froze, because I never throw, are ripe bananas. And they have accumulated quite a bit 🙂

I have already written several times on this topic as part of the project to promote the sustainable development of the IKEA department store – keeping the season and using food to the maximum. With the small changes that each of us introduces into our home every day, we can achieve great savings – not only financial but also savings in the resources of our planet (which are all not unlimited) and affect our own health and the health of our family.

Bananas are somehow always available and always in season, and they are healthiest just when they reach a stage where many do not want them – when they get those brown spots on the skin. Then they are super sweet and can be used to sweeten desserts, they are easier to digest and they are richer in antioxidants. And they’re often on sale;) We’re already singing about how a banana ‘fixes’ every smoothie, makes it creamy and rich – but have you heard of nicecream? I know many of you know about this, but for those who don’t: if you freeze ripe bananas in pieces and blend them with a little milk you will get a wonderful, creamy ice cream that is also completely healthy. You can add various toppings to your liking, some berries, pieces of chocolate, nuts or something else and change it every time. To me, that ice cream a couple of years ago was a real revelation!

The most common version I make because Neva loves it the most is chocolate ice cream on a stick (I use these molds), for which I use only three or four ingredients: frozen bananas, bitter cocoa, milk (optional) and possibly a little honey. To ‘fix’ them a bit, I sometimes dip them in melted chocolate and sprinkle with chopped nuts, giving this creamy ice cream a whole new look. And best of all – I used what I had in the freezer and gave my child something tasty and healthy.

Chocolate ice cream on a stick
A quick and healthy treat for any season. Quantities are for 8-10 ice creams
Ingredients:

3 ripe frozen bananas
100 ml of milk of your choice
2 tablespoons bitter cocoa
As you wish
1 tablespoon honey
Glaze
80 g of dark chocolate
2 teaspoons coconut oil
chopped almonds hazelnuts or walnuts
Instructions:

Remove the bananas from the freezer, pour over the milk and let stand for 10 minutes. Then blend them in a chopper or blender. Add cocoa and if you want a little honey and blend again until you get a completely homogeneous mixture.
Pour into ice cream molds and freeze for at least 4 hours.
Melt the chocolate in the microwave or steam, add and mix the coconut oil well.
Carefully remove each ice cream from the mold (I put it under running water for 5 seconds so it comes out of the mold more easily) and dip it in melted chocolate, then quickly sprinkle with chopped nuts.
Serve the ice cream immediately or wrap in baking paper and return to the freezer until used. I can stand for about 10 days without any problems. Good luck!
