CHICKPEA TABOULEH SALAD WITH MASH

This chickpea salad is a twist on the typical couscous tabouleh. It is really light and delicious. Serve with hummus and falafel as a light side salad, as the main course, or in a pita or wrap.

INGREDIENTS
cooked chickpeas, 1.5 cups (approx. 1 15 oz can)
34 cup of hemp seeds
2 small or 1 big can of chopped tomatoes (approx. 1 cup)
1/2 red onion, chopped (approx. 1 cup)
4 cloves of garlic, minced, 1 red pepper, diced
1 cup of parsley, chopped finely.
2 tablespoons of tahini
2 tablespoons lemon juice, fresh
to taste, sea salt

INSTRUCTIONS
