Banana blueberry baked oatmeal is the ultimate healthy breakfast that tastes like you’re cheating. It’s almost like bread pudding for breakfast but it is made with nutritious whole grain oats and sweetened with maple syrup and a ton of fruit.

This is all the good things you put in a bowl of oatmeal plus some eggs to bind it all together. The eggs give it a firm structure. Firm enough that you can slice the oatmeal into squares but loose enough that it is still a bit like custard.

This baked oatmeal is a healthy breakfast casserole loaded with soluble fiber from the oatmeal and healthy protein from the eggs. It is:

What this is NOT: It is not a granola bar that you can pick up with your hands. You will need a fork or a spoon to eat this baked oatmeal casserole. What goes in banana blueberry baked oatmeal?
Oatmeal flakes. Use old fashioned rolled oats. Do not use instant oats.
Baking powder. It gives it a bit of lift and makes it lighter.
Spices. Cinnamon, nutmeg, and cardamom. The warm spices go perfectly with the blueberries and bananas
Salt. Salt enhances all the flavors.
Milk. You can substitute with non-dairy milk if you prefer.
Eggs. Gives structure and that custard-like texture to this baked oatmeal.
Maple syrup. We are using this sweet tree sap to keep things un-refined but don’t get us wrong. It isn’t health food, it’s simply a healthier choice.
Vanilla extract. Vanilla enhances the sweetness and makes the flavors pop.
Bananas. Use ripe bananas but not mushy ones.
Blueberries. You can use fresh or frozen blueberries. They get juicy and burst open when they cook. So good!

How to make banana blueberry baked oatmeal.
This couldn’t come together faster. We mixed the dry and wet ingredients in separate bowls to make sure they get combined sufficiently.

But honestly, sometimes I just toss it all in the baking dish and stir it really well. If you do that, just make sure everything is very well mixed. A clump of the spices that didn’t get blended could ruin the bite.

Combine the wet and dry ingredients and stir in half of the fruit.
Pour into the baking dish and top with more fruit.

What you will need.
This recipe makes a generous portion. You will need a 13 x 9-inch baking dish. It’s perfect for a family brunch or to bake ahead of time so you can warm up a slice in the mornings.

Do you want to freeze this baked oatmeal?
You can freeze this just fine. Let it cool down then slice it into individual portions and place them in freezer-safe containers.

Tips for success:
Don’t mix this up the night before. If it sits overnight before you bake it, the oats will soak up all the liquid and it won’t have that perfect custardy texture.
Use old fashioned rolled oats. Not instant oats. Not oat groats or steel-cut oats either.
Take it out of the oven when the edges are set and the center still jiggles a bit.
Grease the baking dish before you put the mixture in.

Blueberry Banana Baked Oatmeal

Oatmeal turns into a healthy breakfast custard that is packed with juicy blueberries and creamy bananas. This recipe makes a generous amount and is perfect for a larger group but it also freezes well if you have leftovers.

3 cups rolled oatmeal flakes
1-1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon cardamom
3/4 teaspoon salt
2-1/4 cups milk
3 eggs
1/2 cup maple syrup
4 teaspoons vanilla extract
2 to 3 large bananas, peeled and sliced
2 cups fresh or frozen blueberries

Preheat the oven to 350°F.
Grease a 9 x 13-inch square pan with nonstick spray or line it with parchment paper.
Mix the oatmeal flakes, baking powder, cinnamon, nutmeg, cardamom and salt in a bowl.
In a separate bowl beat the milk, eggs, maple syrup, and vanilla. Stir it into the oatmeal mixture.
Stir in half of the bananas and blueberries. Spread into the baking pan.
Top with the remaining banana and blueberries.
Bake for 35 to 40 minutes until the edges are set and the middle is still slightly jiggly. It will continue to cook when you take it out of the oven.
Cool for 5 minutes then slice and serve.
Do not use instant oats, they soak up more moisture and the baked oatmeal will turn out dry.
