And to be quite honest, it was never on my list. After all, I prefer garbanzo beans to chickpeas since they have a funnier name. The majority of recipes, I’ve seen, call for marinating the chickpeas in the preferred seasonings before roasting them, but I prefer to roast the chickpeas for a bit first, then toss them with a bowl of flavorful seasonings and continue cooking them in the oven.

The chickpeas are less likely to overcook or have the spices burn when I prepare them this manner, in my experience. Kosher salt is my go-to finishing salt because the big crystals give the already deliciously crunchy treat the ideal crispy crunch.

Ingredients
▢2 15 oz Cans Chickpeas
▢3 Tbsp Extra Virgin Olive Oil
▢2 tsp Red Wine Vinegar
▢2 tsp Fresh Lemon Juice
▢1 tsp Kosher Salt
▢1 tsp Dried Oregano
▢½ tsp Garlic Powder
▢½ tsp Cracked Black Pepper

Instructions

Put parchment paper on a baking pan and preheat the oven to 425 degrees. Place the chickpeas on the baking sheet in a single layer after draining, rinsing, and thoroughly drying them.
After roasting for 10 minutes, flip the chickpeas with a spatula to ensure equal baking, then re-roast for another 10 minutes.

The remaining ingredients should be added to a large mixing basin and whisked together. Toss the heated chickpeas carefully until completely covered.
Re-place the chickpeas on the oven sheet and roast for a further 10 minutes, monitoring regularly to make sure they don’t burn. Allow to totally cool before enjoying!
